Description
Albert Sounit Cuvée Prestige Demi-Sec is a refined Crémant de Bourgogne made exclusively from grapes grown at the producer’s own Domaine Bernollin. Combining Pinot Noir, Chardonnay and Aligoté, it is crafted according to the traditional method and matured on its lees for more than 24 months—far beyond the nine-month minimum required for Crémant de Bourgogne. The result is a delicately rounded sparkling wine with persistent bubbles and a touch of residual sweetness.
Tasting Notes
The wine presents a bright, inviting appearance with a fine, enduring mousse. On the nose, expect expressive orchard fruit, ripe citrus and subtle brioche-like nuances from its extended lees ageing, with the Pinot Noir adding depth and gentle red-fruit character.
On the palate, the Demi-Sec dosage brings a smooth, lightly sweet impression that is balanced by fresh acidity and mineral lift. Chardonnay contributes elegance and citrus freshness, while Pinot Noir lends body and Aligoté adds a crisp, lively edge. Its fine bubbles and balanced sweetness make it approachable on release, while the complexity gained through bottle ageing allows it to develop gracefully over the short to medium term.
Production
The cuvée is produced exclusively from grapes grown at Domaine Bernollin and comprises approximately 65% Pinot Noir, 30% Chardonnay and 5% Aligoté. The grapes are hand-harvested and fermented with their natural yeasts. A second fermentation takes place in the bottle according to the Méthode Traditionnelle, after which the Crémant rests on its lees for more than 24 months. It is then disgorged, finished with a slightly higher dosage than the Brut version, and sealed with its final cork.
Food & Serving
Its gentle sweetness and refreshing mousse make this Crémant an excellent partner for pâté, foie gras, lightly spiced Asian dishes and savoury appetisers. It also works beautifully with fruit-based desserts, fresh berries and lightly sweet pastries. Serve well chilled at approximately 6–8°C. Decanting is not recommended; serve directly from the bottle to preserve its delicate bubbles, opening it shortly before serving.
Producer
Maison Albert Sounit is based in a more than 150-year-old wine estate on Place du Champ de Foire in Rully, whose historic cellars were among the early sites used for producing Crémant de Bourgogne. Knud Kjellerup took over the company in 1993 and, together with Alex Holm Jensen and Jesper Krogh, has worked to raise the quality profile of the Côte Chalonnaise. Since acquiring Domaine Bernollin in Jully-les-Buxy in 2005, the house has cultivated 12 hectares of vineyards, with estate-grown grapes contributing around half of its total production. All wines are vinified at Domaine Bernollin, which has benefited from substantial investment in modern winemaking facilities.
