Adami’s expression captures the essence of this unique terroir, offering a luxurious, gently sweet style that still remains refined and beautifully balanced.

Tasting Notes
In the glass, this Prosecco Superiore shimmers a pale, luminous straw-yellow with a fine, persistent mousse and delicate, elegant bubbles. The nose is intensely aromatic and inviting, with notes of ripe golden apple, white peach, pear and apricot layered with acacia blossom, wisteria and a subtle hint of citrus zest and almond pastry. On the palate, the wine is creamy yet weightless, with the natural richness of Cartizze fruit framed by a vibrant, filigreed acidity. Flavours of juicy stone fruit, pear and candied citrus peel unfold alongside floral tones and a gentle mineral backbone. The “Dry” designation here means a touch of residual sugar, expressed as silky sweetness rather than heaviness, leading to a long, harmonious, fruit-driven finish. Best enjoyed within a few years of release for its peak freshness and aromatic intensity, though top Cartizze like this can develop softer, honeyed nuances with short-term cellaring.

Production
Sourced from the steep, hand-tended slopes of the Cartizze hill in Valdobbiadene, this wine reflects one of the most prized terroirs in the Prosecco region, combining ancient hillside vineyards, poor rocky soils and optimal exposure. Grapes (predominantly Glera) are harvested by hand at perfect ripeness to ensure both aromatic intensity and balanced acidity. After a gentle pressing, the must is cool-fermented in stainless steel to preserve delicate aromatics, followed by the secondary fermentation in pressurized tanks (Charmat-Martinotti method), carefully controlled to achieve a fine, persistent perlage and a polished, creamy texture. Adami’s meticulous approach emphasizes purity, precision and the natural elegance of Cartizze fruit.

Food & Serving
This Cartizze Dry is a superb match for refined appetizers and lightly sweet or delicately spiced dishes: think prosciutto and melon, delicate pâtés, tempura-style seafood, sushi, or soft, creamy cheeses. It also shines with fruit tarts, panettone, almond biscuits and other lightly sweet pastries. Serve well-chilled at around 6–8°C to highlight its freshness and finesse. Decanting is not necessary; simply open and pour gently into tulip-shaped sparkling wine glasses to fully enjoy the aromas and fine bubbles.
