Tasting Notes
In the glass, this wine shines from greenish yellow to a more intense golden hue as it opens, hinting at both freshness and concentration. The nose is lifted and precise, with notes of green apple, pear and white peach woven together with citrus zest, fresh herbs, white pepper and a subtle floral touch.
On the palate, it is crisp, elegant and finely structured. Lively acidity carries flavors of juicy orchard fruit, lemon and lime, joined by hints of fennel, wet stone and a gentle spiciness that is so typical of Grüner Veltliner. The mid-palate is both delicate and persistent, leading to a clean, mineral-driven finish. Abbazia di Novacella’s vineyards lie in the cool, high-altitude landscapes of Trentino-Alto Adige, where steep slopes, well-drained glacial and alluvial soils, and significant day–night temperature swings help Grüner Veltliner retain its freshness and aromatic finesse. Grapes for the Praepositus range are typically hand-harvested to ensure careful selection of bunches at optimal ripeness. In the cellar, the must is gently pressed and fermented at controlled temperatures in stainless steel to preserve the variety’s delicate aromatics and bright fruit, with a period of maturation on fine lees to build texture and complexity without overshadowing the wine’s natural energy.
Food & Serving
This Grüner Veltliner is a versatile partner at the table, pairing beautifully with freshwater and saltwater fish, shellfish, sushi, light poultry dishes, asparagus, spring vegetables, and delicately spiced Asian cuisine. It also complements soft cheeses and vegetable-based starters. Serve well-chilled, ideally around 8–10 °C (46–50 °F), to highlight its freshness and aromatic detail. Decanting is not necessary, but pouring it into a slightly larger white-wine glass and giving it a few minutes in the glass will allow the wine’s subtle herbal and mineral notes to fully unfurl.
