Jean-Paul & Benoît Droin’s Chablis Grand Cru Les Clos “Hommage à Louis” is a powerful, focused expression of Chardonnay from one of Chablis’s most prestigious sites. Tasting Notes
The nose brings together ripe peach, oyster shell and a subtle smoky note. On the palate, the wine is concentrated and taut, with a full yet finely balanced structure. Citrus, flint and saline, maritime notes are carried by a distinctive mineral edge.

Production
The fruit comes from approximately 40-year-old vines in Les Clos, with west- and southwest-facing exposure. The Kimmeridgian soils vary across the slope, from gravelly limestone higher up to deeper clay below, including a band of blue clay that contributes to the wine’s tension and saline character. After pneumatic pressing and settling, fermentation with indigenous yeasts takes place partly in stainless steel and partly in barrels, followed by malolactic fermentation. The blend is assembled after eight to ten months, then lightly filtered before bottling. Harvesting details are not provided.

Food & Serving
Serve at around 10–12°C with turbot, monkfish or other fine-textured fish; it also suits sushi and gently spiced dishes. Decanting is optional, but a short spell in a decanter can help the wine open if enjoyed young.
