Description

Fabrice Chaillou’s La Dévergondée is a Loire Valley Chenin Blanc pét-nat, presented in a generous magnum for sharing. Its name means “shameless,” while the label nods to the free-spirited 1920s; the wine is made using one of sparkling wine’s oldest methods, with its bubbles formed during the first fermentation.

Production
Pét-nat, short for pétillant naturel, is made by bottling the wine while its first fermentation is still underway, allowing the resulting carbon dioxide to create the sparkle. This differs from the traditional-method approach, in which a second fermentation is started in bottle with the addition of sugar. Vineyard and harvest details for this cuvée have not been provided.

Food & Serving
Serve well chilled, around 6–8°C, with snacks, charcuterie, fresh cheeses or seafood. Open carefully, as pressure can vary in pét-nat; decanting is not usually necessary.
