Description
Domaine Gauby’s Calcinaires is a distinctive red from the rugged limestone landscapes of northern Roussillon. It combines the warmth and generosity of Mediterranean fruit with the freshness, savoury complexity and mineral character associated with the domaine’s high-altitude vineyards.
Tasting Notes
Deep ruby in colour, the wine offers an expressive nose of ripe red and dark berries, wild herbs, violets and subtle mineral notes. On the palate, it is fresh and finely structured, with flavours of blackberry, plum and cherry complemented by pepper, garrigue and gently earthy nuances. The texture is supple yet focused, with well-integrated tannins and a lively finish. It is approachable in its youth, but should develop additional savoury complexity over the next few years.
Production
The wine comes from the limestone-rich terroir around Calce in the Roussillon, where poor soils, elevation and Mediterranean sunshine help produce concentrated yet naturally fresh fruit. Domaine Gauby is known for sustainable, low-intervention viticulture and careful work in the vineyard, with harvesting carried out by hand. The fruit is vinified with a restrained approach to preserve its freshness, mineral character and expression of place.
Food & Serving
A versatile partner for grilled lamb, roasted poultry, duck, herb-crusted pork and rustic Mediterranean dishes such as ratatouille or mushroom-based preparations. Serve lightly cool at around 15–17°C. Decanting is not essential for immediate enjoyment, though 30–60 minutes of aeration can help open the wine and reveal its savoury complexity.
