Tasting Notes
In the glass, the 2019 Cerretalto is deep, luminous ruby with garnet reflections at the rim, hinting at both concentration and longevity. The nose is layered and complex: wild cherries, black plum and ripe red berries interwoven with notes of violets, blood orange, tobacco leaf, graphite, cocoa, and that distinctive ferrous, almost saline minerality that is a hallmark of this site. Subtle accents of dried herbs, licorice, spice box and well‑integrated oak emerge with air.
On the palate, this wine is full‑bodied yet impeccably balanced, with a dense, finely woven tannic structure and a vibrant core of acidity that drives the long, resonant finish. Flavors of dark cherry, black raspberry and morello cherry are framed by savory tones of leather, iron, truffle and underbrush, evolving toward notes of espresso, dark chocolate and sweet spices. The texture is both powerful and polished, with great tension and energy. Still very youthful, the 2019 Cerretalto has enormous aging potential; properly cellared, it will evolve beautifully over 20–30 years, gaining even more aromatic complexity and harmonious depth.
Production
Cerretalto comes from a meticulously farmed single vineyard on the eastern side of Montalcino, where the soils are rich in galestro, stones, iron and minerals that confer the wine’s unmistakable vitality and savory, ferrous edge. The Sangiovese vines here are relatively low‑yielding, producing small, loosely packed clusters that are hand‑harvested at optimal ripeness, with rigorous selection both in the vineyard and upon arrival at the winery. Vinification is tailored to express the purity of the site: long macerations to extract fine tannins and aromatic complexity, spontaneous fermentation or carefully managed temperature‑controlled fermentations in stainless steel or cement, followed by extended aging—typically several years—in large oak casks and/or carefully chosen barrels. After élevage in wood, the wine rests further in bottle before release, ensuring that Cerretalto reaches the market with its structure and balance already beginning to knit together.
Food & Serving
Cerretalto 2019 is a natural partner for rich, deeply flavored dishes that can stand up to its structure and intensity. Think classic Tuscan cuisine: bistecca alla fiorentina, slow‑braised beef or veal, wild boar ragù, roasted or grilled lamb, aged pecorino, and dishes featuring truffles or mushrooms. It also pairs beautifully with game birds, roast duck, and hearty risottos with porcini or Parmigiano. Serve at 16–18°C (60–64°F) in large Burgundy or wide tulip‑shaped glasses to allow full aromatic expression. In its youth, decanting for 2–3 hours is strongly recommended to open up the bouquet and soften the tannins; as it gains bottle age, a shorter decant to remove sediment and allow gentle aeration will suffice.
