Production
Kastanienbusch is one of the great grand-cru sites of the Pfalz, a steep, south and south‑east facing hillside near Birkweiler, planted on rare, iron‑rich red sandstone mixed with slate and clay. This poor, rocky soil, combined with good elevation and cooling forest influences, creates a long growing season and naturally low yields, ideal for concentrated, mineral-driven Riesling. At Weingut Ökonomierat Rebholz, the vines are farmed organically and biodynamically inspired, with painstaking handwork throughout the season to ensure perfect grape health and optimal ripeness. Harvest is done entirely by hand, often in multiple passes, allowing only the most pristine, fully ripe bunches to be selected for Großes Gewächs quality. In the cellar, Rebholz follows a quietly minimalist approach: gentle pressing of whole clusters, slow, temperature‑controlled fermentation—often with ambient yeasts—in stainless steel and/or large neutral oak, followed by extended lees contact to build texture and complexity without masking the clarity of the site.
