Domaine Vacheron Sancerre Blanc Guigne-Chèvres Bio 2021 is a strikingly pure, single-vineyard expression of Sauvignon Blanc from one of Sancerre’s coolest, most austere sites. Crafted from nearly 40-year-old vines rooted deep in limestone and flint, it delivers a style that is razor-sharp, intensely mineral and wonderfully focused. Certified biodynamic and aged for ten months in large Stockinger foudres, this is a Sancerre of uncommon precision, tension and finesse that shows the 2021 vintage at its most elegant and refined.

Tasting Notes
In the glass, Guigne-Chèvres 2021 appears pale straw with silvery-green reflections, underlining its youthful freshness and cool-climate origin. The nose is immediately incisive and maritime in character: think crushed stone, wet chalk, sea spray and oyster shell, all wrapped in a veil of subtle green herbs and white-fleshed stone fruit. With aeration, more nuances unfold – lime zest, elderflower, green apple and a delicate hint of flint smoke, adding complexity without ever becoming overtly fruity. On the palate, this is a taut, powerful yet linear Sancerre, driven by a firm, racy acidity and a pronounced saline minerality. The fruit remains restrained and precise – green apple, lime, white nectarine – serving more as a frame for the texture and the stony backbone than as the main event. The mouthfeel is concentrated but weightless, with great energy and length; the finish is long, dry and mouthwatering, leaving impressions of chalk, citrus peel and sea salt. While already thrilling in its youth, the structure and mineral depth suggest very good aging potential over the next 5–8 years, during which the wine will gain further complexity and aromatic nuance.

Production
Guigne-Chèvres is one of Domaine Vacheron’s coolest and most barren parcels, a north-facing single vineyard where Sauvignon Blanc ripens slowly on hard limestone and flint soils. The near 40-year-old vines are farmed biodynamically, encouraging deep root systems and an authentic expression of terroir, without synthetic inputs. Harvesting is typically done by hand to ensure careful selection of perfectly ripe, healthy grapes. In the cellar, the must is vinified with a gentle, non-interventionist approach and then aged for around ten months in large Stockinger foudres, whose neutral oak preserves purity while allowing subtle oxygen exchange. The result is a wine that is crystal-clear in its expression of site – cool, mineral and finely etched.

Food & Serving
This Sancerre’s saline, mineral intensity and brisk acidity make it a superb partner for seafood: oysters, clams, scallops, langoustines and simply grilled white fish shine alongside its maritime character. It also pairs beautifully with goat’s cheese (especially Crottin de Chavignol), sushi and sashimi, ceviche, as well as delicate vegetable dishes featuring asparagus, fennel, peas or fresh herbs. Serve well-chilled but not icy, ideally around 9–11°C, to allow the aromatics and texture to unfold. A brief decant of 20–30 minutes, or simply opening the bottle a little in advance, can help the wine reveal its full complexity, especially in its first few years.

A perfect example of a top-shelf Sancerre. A magical balance of fruit character and oak. What really stands out to me is the wine’s tension. It leaps out of the glass with an elegant, fresh nose.

Once the snow is gone, there is spring in the air, and then it seems only natural to pour a little spring into the glass. I immediately think of Sancerre, here from a single vineyard, from Domaine Vacheron, offering the full aromatic palette Sauvignon Blanc has to offer. The estate always achieves a finesse in the aromas that many others cannot. None of the aromas are overplayed, none understated – only elegance all the way!
