Suavia Castellaro Soave Classico 2021 is an elegant organic white wine made from Garganega grapes grown in the historic Fittà di Soave vineyards. Defined by crystalline freshness, volcanic minerality and a long, savoury finish, it offers a refined expression of one of Veneto’s most distinctive terroirs. The wine reflects the Tessari family’s generations-long connection to the hills of Soave, dating back to the 19th century.
Tasting Notes
The wine has a clear straw-yellow colour. Its refined nose combines fragrant jasmine and lemon zest with subtle hints of white pepper, creating an aromatic profile that is both floral and gently spicy. On the palate, it is lively and energetic, with precise acidity, a pronounced mineral character and a rounded texture from extended contact with fine lees. The finish is savoury, persistent and beautifully focused. It is approachable now, while its structure and mineral freshness should allow it to develop further in bottle over the coming years.
Production
The Garganega grapes are harvested by hand from vineyards in Fittà di Soave, where medium-depth volcanic soils are formed from weathered, rock-rich basalt. This distinctive terroir lends the wine its pronounced mineral character and energetic style. Following the harvest, fermentation takes place in stainless-steel tanks without malolactic fermentation. The wine then rests on fine lees for 12 months to build texture and complexity, followed by a period of bottle ageing and a single membrane filtration before release.
Food & Serving
Serve lightly chilled at approximately 10–12°C. Castellaro is an excellent match for delicate fish dishes, shellfish, sushi and sashimi, as well as lighter starters and mature cheeses. Its vibrant acidity and mineral freshness make decanting unnecessary, although allowing the wine a few minutes in the glass will help its floral and spicy aromas unfold.
Producer
Suavia is the Tessari family’s estate in the Soave Classico region, where the family has cared for its vineyards since the 1800s. Under the direction of oenologist Valentina Tessari, the winery combines a strong respect for the volcanic hills of Fittà with organic and sustainable vineyard practices. Castellaro is produced from historic Garganega vines and matured on fine lees for 12 months, followed by additional bottle ageing. Its refined mineral expression has earned the wine an outstanding 95-point rating from James Suckling.
