Sourced from vineyards in Lebanon’s Bekaa Valley, Sept Merweh 2022 benefits from high-altitude sites, strong diurnal temperature shifts, and limestone-rich soils that contribute to its tension and mineral character. The grapes are typically harvested by hand to ensure careful selection and preserve the natural freshness of this delicate, native variety. In the cellar, Sept favors a low-intervention approach: gentle pressing, spontaneous fermentation with indigenous yeasts, and maturation in neutral vessels (such as stainless steel or older oak) to allow the Merweh grape and Bekaa terroir to take center stage without heavy influence from new wood or excessive winemaking manipulation.

Food & Serving
This Merweh is an excellent match for Mediterranean and Levantine cuisine: think grilled or baked white fish with herbs, mezze spreads with hummus and labneh, fresh goat or sheep’s cheeses, and dishes featuring olive oil, lemon, and fresh herbs. It also pairs nicely with simple roasted chicken, seafood pasta, and light vegetable dishes. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow its aromas and texture to open up. A quick splash in a carafe or a brief 15-minute rest in the glass is generally enough aeration for this style.
