Description
Coyam 2021 is an intense, organically and biodynamically farmed red blend from Emiliana, created to express the richness and biodiversity of Chile’s Colchagua Valley. Combining nine varieties—including Syrah, Carménère, Cabernet Sauvignon, Carignan, Grenache, Mourvèdre, Petit Verdot, Malbec and Tempranillo—it offers depth, concentration and remarkable harmony. First created in 1998, Coyam has become one of Emiliana’s signature wines and a leading example of premium biodynamic Chilean winemaking.
Tasting Notes
The wine shows a deep ruby-red colour with impressive concentration. Its expressive bouquet is layered with blackcurrant, wild berries and ripe dark fruit, complemented by hints of toasted black pepper and subtle oak spice. Full-bodied and generous on the palate, it combines a firm yet polished structure with ripe, supple tannins and well-integrated oak. The finish is notably long and persistent, with dark-fruit intensity and savoury spice lingering. Coyam is approachable in its youth but has the structure to develop further in bottle over the coming years.
Production
The grapes are sourced from sustainably farmed vineyards in Chile’s Maipo and Colchagua valleys, with the wine identified particularly with the Colchagua Valley. Emiliana follows strict organic and biodynamic principles, encouraging biodiversity and keeping yields deliberately low to promote concentration and aromatic intensity. The grapes are harvested by hand and carefully selected before being moved through the winery by gravity. Following a short cold maceration, fermentation takes place in temperature-controlled stainless-steel tanks. The blend then matures for 12 months in French and American oak barrels, which soften the tannins while adding depth, spice and complexity.
Food & Serving
Its full-bodied character makes Coyam an excellent match for grilled beef, slow-cooked lamb, venison and richly seasoned pork. It also pairs well with roasted vegetables, mushroom dishes and mature hard cheeses. Serve at approximately 16–18°C. Decanting for 30–60 minutes is recommended when serving the wine young, allowing its layered fruit, spice and oak notes to open fully.

Founded in 1986, Emiliana has played a pioneering role in Chile’s organic and biodynamic wine movement. The producer’s vineyards are managed with a strong focus on ecological balance, biodiversity and sustainable agriculture, and Coyam—first produced in 1998—represents this philosophy in one of its most ambitious blends. Its careful manual harvesting, gravity-fed handling and extended oak maturation have helped establish Coyam as a distinctive and respected expression of Chilean terroir.
