Tasting Notes
In the glass, Les Jardinots 2020 pours a pale, luminous gold with fine, persistent bubbles that form a delicate mousse. The nose opens with crisp orchard fruits—think just-ripe pear and green apple—supported by notes of citrus zest, white flowers and a subtle chalky minerality. With air, hints of brioche, almond skin and a touch of spice begin to emerge, speaking to time on lees and careful élevage. On the palate, this is brisk, straight and dry, as you’d expect from a Brut Nature, yet never austere. Pinot Noir lends structure and a gentle, red-fruited depth, while Chardonnay brings tension, salinity and lift. Flavors of lemon confit, crunchy apple and pear, grapefruit pith and a whisper of stone fruit are layered over a finely etched mineral backbone. The finish is long, clean and mouthwatering, leaving a saline, chalky impression. Les Jardinots comes from a specific parcel within Amaury Beaufort’s holdings in the southern reaches of Champagne, where more temperate Aube influences and Kimmeridgian limestone-clay soils give wines both flesh and a vivid mineral line. Vines are tended with a strong focus on soil life and low-intervention farming, with careful hand work in the vineyard and manual harvesting at optimal ripeness to preserve acidity and aromatic clarity. In the cellar, the grapes are gently pressed and the base wines are fermented with minimal manipulation, often in a mix of stainless steel and neutral vessels to balance precision with textural complexity. Extended aging on the lees brings fine bubbles and subtle pastry notes, and the wine is bottled without dosage as Brut Nature, allowing the natural balance of the 2020 vintage and the character of the Les Jardinots terroir to take center stage.

The taut, bone-dry profile of Les Jardinots 2020 makes it a versatile partner at the table. It shines with briny oysters, scallop crudo, sushi and sashimi, as well as simply grilled fish with lemon and herbs.
