Sourced from old-vine Chardonnay in the Côte de Beaune, it captures the region’s hallmark balance of freshness, minerality, and discreet oak. This cuvée has become a benchmark for those seeking a “true” Bourgogne Blanc that reflects Burgundian heritage more than basic appellation status.

Tasting Notes
In the glass, the 2021 Cuvée Saint-Vincent shows a pale lemon color with silvery reflections, hinting at its cool-climate origin. The nose is refined and pure: delicate citrus (lemon zest, white grapefruit), green apple, and pear are layered with white flowers, a touch of almond, and a subtle chalky minerality. Gentle notes of vanilla and fresh bread dough from the oak and lees aging sit in the background rather than dominating. On the palate, this is surprisingly dense and concentrated for a Bourgogne Blanc, with a creamy, well-textured mid-palate balanced by lively, precise acidity. Flavors of crisp orchard fruit, lemon curd, and a hint of stone fruit are wrapped in a fine, saline minerality and very well-integrated oak. The finish is clean, fresh, and persistent, with a faint nuttiness and floral echo. Enjoyable now for its energy and clarity, it has the structure to age gracefully for around 5–7 years from vintage, gaining more complexity and a gently honeyed character over time.

Production
The Chardonnay for this wine comes from parcels in the Côte de Beaune planted with approximately 50-year-old vines rooted in classic Burgundian clay-limestone soils, which lend both power and tension to the wine. The grapes are selectively hand-harvested to ensure optimal ripeness and fruit quality, then gently pressed to preserve finesse. After a light settling of the must, both alcoholic and malolactic fermentations occur spontaneously with native yeasts in 500-liter oak barrels, about 10% of which are new, providing subtle structure and nuance without overwhelming the fruit. The wine then matures for 11 months on its lees before being lightly filtered and bottled on a favorable “fruit day” according to the lunar calendar, in keeping with Girardin’s focus on precision and purity.

Food & Serving
This Bourgogne Blanc is a versatile food wine that shines with refined yet comforting dishes. It pairs beautifully with roast or sautéed poultry—especially classic Poulet à la Moutarde (chicken in mustard cream sauce)—as well as roast chicken with herbs, veal in light cream sauces, and butter-poached or grilled white fish. It also complements shellfish, seared scallops, creamy risottos, and mild, bloomy-rind cheeses like Brie or Camembert. Serve at 10–12°C (50–54°F) to highlight its freshness and aromatic detail; a brief 20–30 minutes in the fridge before serving is ideal. Decanting is not essential, but opening the bottle 20 minutes in advance or using a small carafe can help the wine fully express its floral and mineral nuances.
