The Gamay grapes are harvested at optimal ripeness, often by hand, to preserve berry integrity and allow for careful selection. In the cellar, traditional Beaujolais methods are used, typically combining partial whole-bunch fermentation with gentle extraction to capture both aromatic lift and fine-grained tannins. Fermentation in temperature-controlled vats is followed by maturation in tank and possibly large neutral oak, striking a balance between freshness, purity of fruit, and textural refinement.
