Moritz Kissinger Null Ohm Weiß Bio 2023 is an organically crafted white blend from Rheinhessen that brings together Chardonnay and Pinot Blanc (Weißburgunder) in an energetic, modern style. Sourced from carefully chosen vineyard sites, it captures both the power of loess- and clay-rich soils and the elegance of limestone near the Rhine. This cuvée reflects not only its Rheinhessen origins, but also Moritz Kissinger’s personal signature: spicy, reductive aromatics and a vibrant, electric freshness.
Tasting Notes
In the glass, Null Ohm Weiß Bio 2023 shows a pale to medium straw color with youthful, greenish highlights that underline its freshness and energy. The nose is initially slightly reductive in a deliberate, modern way, revealing savoury, smoky and flinty nuances before opening up to notes of citrus zest, green apple, pear and a touch of white blossom, all wrapped in a cool, herbal spice.
On the palate, the wine is taut and precise, with the Pinot Blanc component delivering structure and a gentle, rounded mid‑palate, while the Chardonnay contributes finesse and length. You can expect a lively acidity that keeps everything in motion, giving the wine its “vibrating” freshness, alongside a fine, almost saline minerality from the limestone sites along the Rhine. Production
The Pinot Blanc for this cuvée comes from vineyards around Uelversheim, where deep loess and clay soils lend grip, pressure and a solid backbone to the wine. The Chardonnay grows on limestone-rich parcels along the Rhine front, a classic Rheinhessen terroir that brings linearity, lift and fine-boned elegance. The grapes are organically farmed and harvested with careful selection to preserve purity and freshness. In the cellar, Moritz Kissinger works with an intentionally reductive, low‑oxygen approach to protect the fruit and enhance savoury complexity, likely employing gentle pressing, cool fermentation and a restrained use of oxygen throughout the vinification process to capture the wine’s spicy edge and vibrant, precise character.

This cuvée’s combination of structure and freshness makes it highly versatile at the table. Pair it with grilled or roasted white fish, ceviche, sushi, or seafood salads, as well as poultry dishes, light veal, or vegetable-focused cuisine such as asparagus, risotto with spring vegetables, and herb-driven salads. Its savoury, reductive notes also work beautifully with lightly smoked dishes and soft to semi-hard cheeses. Serve well chilled at about 8–10°C. Decanting is not essential, but pouring it into a carafe or giving it a few minutes in the glass can help the initial reduction unfurl and reveal more fruit and spice.
