Grapes are left on the vine until late in the season to achieve higher sugar concentration and, in favorable years, a touch of noble rot, then harvested by hand in multiple passes to ensure optimal ripeness and selection. In the cellar, the must is gently pressed and fermented at controlled temperatures to preserve aromatic intensity and freshness; aging typically takes place in stainless steel or a mix of tank and neutral oak, focusing on purity of fruit, clarity, and balance rather than heavy wood influence.
