I have developed a great love for Spätburgunder. Especially from the Gabel estate, which is more Burgundy-inspired in expression and style.

This champagne is something truly extraordinary. Made from three different vintages, it comes wrapped in hay and a small envelope with the story of a day in 1911.It was also on the very first wine menu at The Samuel.

Lovely fresh and mineral Grüner. A white wine that is easy to drink with hearty salads, cheese, or as a glass on a Thursday evening

To date, one of the best Rieslings from Germany I have tasted. It is fresh, fruity and mineral, and tastes of so much more! I would personally buy quite a few bottles of this and keep them for next summer

A producer that makes top-class wines! This is especially good value wine. A white wine that is pleasant to drink with food or without food, just a sensible glass of wine (also on a Monday 😉)

Another wine that one should try at least once in their life, if they have not already become acquainted with Central Otago in New Zealand. Another one of the first wines I used on a wine menu many years ago!

An iconic house in Austria. Another producer whose wine you should taste, if you ask me 😉Some of the bottles are released late, so this is a mature white wine with a different character than what is usually associated with Austria’s mineral style.

Port wine! I love port wine. I actually think most people do too – if nothing else, then at least a little secretly. I like drinking it in the afternoon, that's no secret. Agua Alta is located a bit inland, about 940 meters above sea level. It tastes delicious. If you can get your hands on it, try it. It goes well with steak, cheese, or of course risalamande, when we get to that point.

Grüner Veltliner from Austria, from a family-owned house called Steininger. If you haven't tried Austrian wine before, you owe it to yourself to try some Grüner – it tastes absurdly good. Good acidity, a little bit of residual sugar at 3.7 grams per liter if you want a fun fact. It's a unique wine. Great summer wine. Do it. Just try something new.

I'm in a Meursault phase, and that's really not a bad phase to be in 😉So much good wine from a lot of different vineyards. Vincent Girardin is no exception. Classy wine, you rarely go wrong with it 😉

The rosé champagne you can’t go wrong with; it can easily be used for more than just an aperitif. I myself had the pleasure of drinking it with a 10-course menu in England, which was really delightful with all the fish on the menu.

Another “house champagne” in my cart, and it never fails. This can even be served with fish and shellfish for the holidays upon us. Fresh, well balanced with the bubbles and richness. Not too sweet nor dry, at least in my opinion.

If I could only drink one champagne for the rest of my life, I would go with Pol Roger. It is a champagne you never grow tired of, fresh and fruity with gentle bubbles, and it can be enjoyed with anything. It is most often what I drink myself with desserts.
