Zýmē 60 20 20 2021 is a sleek, modern expression of Veneto’s answer to a Bordeaux blend, crafted from Cabernet Sauvignon, Cabernet Franc and Merlot. The name says it all: 60% Cabernet Sauvignon, 20% Cabernet Franc and 20% Merlot, each variety adding its own clearly defined character to the final wine. Conceived as a tribute to the ‘gift of life’, it’s a polished, structured red that bridges classic Old World elegance with contemporary Italian flair.

Tasting Notes
In the glass, 60 20 20 2021 shows a deep, vibrant ruby colour with a youthful purple rim, hinting at both concentration and freshness. The nose opens with dark berries and blackcurrant from the Cabernet Sauvignon, joined by red cherry and plum, subtle graphite, and a touch of bell pepper and wild herbs from the Cabernet Franc. As it unfolds, you’ll find notes of sweet spices, cedar, cocoa and a gentle tobacco leaf nuance from well-judged oak ageing. On the palate, the wine is medium to full-bodied, with a firm yet refined tannic backbone and a lively acidity that keeps everything precise and energetic. Ripe blackberry, cassis and cherry are layered with hints of licorice, pencil shavings, roasted coffee and a savoury, almost mineral edge that speaks of its Veneto origins. The finish is long and persistent, with fine-grained tannins and a satisfying balance between fruit, spice and freshness. Enjoyable now with a brief aeration, it has the structure to develop further complexity over the next 7–10 years.

Production
Zýmē sources the fruit for 60 20 20 from selected vineyard sites in Veneto, where well-drained, mixed calcareous and clay-rich soils help give Cabernet and Merlot both ripeness and definition. Yields are kept deliberately low, and harvesting is done by hand to ensure optimal selection of bunches at perfect physiological ripeness. After gentle destemming and crushing, the varieties are vinified separately in temperature-controlled tanks, allowing precise extraction of colour and tannin while preserving aromatic purity. Following fermentation and maceration, the wine is aged in oak barrels—typically a mix of French barriques and larger casks—long enough to gain texture and complexity without overshadowing the fruit, before the final blend is assembled and bottled with a short period of rest prior to release.

Food & Serving
This structured yet polished red is a natural partner for rich, flavourful dishes: think grilled or roasted red meats, lamb with Mediterranean herbs, slow-cooked ragù, game birds, or aged hard cheeses such as Parmigiano Reggiano and Pecorino. It also works beautifully with mushroom risotto, truffle dishes or roasted root vegetables with rosemary. Serve at 16–18°C, ideally after 45–60 minutes in a decanter when young, to allow the tannins to soften and the aromatics to fully open.

The name “Zýmē” comes from the Greek word for “yeast”, symbolising transformation, life and the deep connection between nature and winemaking. While Zýmē is best known for its characterful interpretations of Valpolicella and Amarone, the estate has also become a reference point for innovative, terroir-driven IGT wines such as 60 20 20, which showcase international varieties through a distinctly Venetian lens.
