Tasting Notes
The wine typically shows a luminous golden colour that deepens with age. On the nose, it offers layered aromas of honey, saffron, apricot, candied citrus, dried pineapple, and toasted spice, with the complex botrytis character that defines great Sauternes. The palate is rich and silky, yet held in perfect tension by vibrant acidity, delivering concentration, elegance, and an almost endless finish. 2005 is a vintage with excellent structure and aging potential, and Yquem from this year is built for long cellar life. It can be enjoyed now for its complexity, but it will continue to evolve beautifully over decades, gaining additional notes of caramel, truffle, dried fruit, and beeswax.

Production
Château d’Yquem is located in Sauternes, where morning mist from the Ciron and Garonne rivers encourages noble rot, concentrating the grapes naturally. Harvesting is done entirely by hand in multiple selective passes, with only the perfectly botrytized berries picked each time. Vinification is meticulous and traditional, with fermentation and aging in oak barrels to preserve purity while adding depth, texture, and nuance.

Food & Serving
Serve slightly chilled, ideally around 8–10°C, in small wine glasses to highlight its aromatic intensity. It pairs beautifully with foie gras, blue cheese, fruit-based desserts, tarte Tatin, or simply on its own as a contemplative wine. Decanting is usually not necessary for a young bottle, but older vintages can benefit from a gentle splash decant to help them open up.
