Description
Wynns John Riddoch Cabernet Sauvignon is the flagship red of Coonawarra, crafted only in exceptional vintages from the region’s finest Cabernet parcels. Named after John Riddoch, the pioneer who established Coonawarra’s first vineyards in the late 19th century, the wine combines classic Australian Cabernet richness with the structure and longevity for which the region is renowned.
Tasting Notes
Deep crimson with youthful purple highlights, the 2016 vintage opens with aromas of blackcurrant, blackberry and dark plum, followed by notes of cedar, graphite, mint and subtle tobacco. The palate is concentrated yet finely balanced, with ripe cassis and blackberry flavours supported by savoury spice, well-integrated French oak and a firm, polished tannic framework.
A wine of considerable depth and length, it finishes with refreshing acidity and persistent dark-fruit character. The structure suggests excellent cellaring potential, with the wine likely to develop further complexity over the next decade or more while retaining its Cabernet definition.
Production
The wine is sourced from selected vineyards on Coonawarra’s famed terra rossa soils, a distinctive red loam over limestone that helps produce Cabernet Sauvignon with both intensity and freshness. Grapes are carefully selected from low-yielding, quality-focused parcels and undergo traditional red-wine vinification before maturation in French oak. The combination of precise fruit selection, measured oak influence and extended maturation builds the wine’s depth, texture and long-term ageing capacity.
Food & Serving
Serve at 16–18°C after allowing the bottle to come close to room temperature. Decant for around one to two hours when drinking young to open the wine’s aromatics and soften its youthful tannins; older bottles should be decanted more gently, primarily to separate the wine from any sediment. Its structure and richness make it an excellent match for roast beef, grilled or slow-cooked lamb, venison, hearty mushroom dishes and mature hard cheeses.
