Production
The Graacher Domprobst vineyard is a steep, south- to southwest-facing slope perched above the Mosel River, dominated by weathered Devonian slate that stores heat by day and releases it at night, helping Riesling achieve perfect ripeness while preserving acidity. The cool Mosel climate and the river’s moderating influence create a long growing season, allowing grapes to develop delicately layered aromatics and a pronounced mineral character. At Willi Schaefer, grapes are traditionally harvested by hand in multiple passes (selective picking) to capture bunches at optimal Spätlese ripeness while maintaining impeccable fruit health. In the cellar, the estate follows a gentle, minimalist approach: carefully pressed whole clusters, natural fermentation (often with indigenous yeasts) in stainless steel or old Mosel fuders (large oak casks), and extended time on fine lees to build texture and complexity. The result is an unforced, transparent expression of site and vintage, with no excess extraction or oak influence.
