From one of Mosel’s most revered estates, the 2005 Willi Schaefer Graacher Domprobst Riesling Auslese A.P. #11 is a benchmark example of finely etched, cellar‑worthy German Riesling. Sourced from the famed Domprobst vineyard above the village of Graach, this Auslese marries luscious ripeness with the estate’s signature lightness and clarity. The 2005 vintage in Mosel produced deeply flavored, beautifully balanced sweet wines, and this bottling has already earned a quiet cult status among Riesling collectors.

Tasting Notes
In the glass, this Riesling Auslese shows a bright, luminous golden hue that reflects both its age and concentration. The nose is intensely expressive, with baked apple, warm vanilla and heady floral notes—think honeysuckle and white blossom—layered over hints of brown baking spices and a touch of slatey minerality. On the palate, it is compact yet deeply concentrated, delivering succulent apple and stone‑fruit flavors wrapped in a silken texture. Brown spice—cinnamon, clove and a whisper of nutmeg—adds warmth and dimension to the ripe fruit. Despite its sweetness, there is striking juiciness and mouthwatering acidity, giving the finish lift, clarity and a sense of remarkable purity. Now showing beautifully with developed complexity, this 2005 Auslese still has excellent aging potential; well‑stored bottles can easily continue evolving for another decade or more, gaining honeyed, smoky and tertiary nuances over time.

Production
Graacher Domprobst is one of the Mosel’s grandest slopes, a steep, southwest‑facing vineyard composed of weathered blue slate that stores heat by day and releases it at night, helping Riesling ripen slowly and perfectly. Willi Schaefer farms these parcels with meticulous, hands‑on work, harvesting by hand to ensure only impeccably healthy, optimally ripe and selectively botrytised grapes make it into this Auslese. The fruit is gently pressed and fermented with natural yeasts in traditional, neutral Mosel fuder (large oak casks), allowing the vineyard character and vintage to speak clearly. Fermentation is stopped at an ideal balance of sweetness, acidity and alcohol, followed by extended aging on fine lees to enhance texture, finesse and aromatic complexity.

Food & Serving
This Auslese is superb with rich poultry dishes such as roast duck with apple or orange, foie gras, or lightly spiced pork dishes, where its sweetness and acidity cut through fat and highlight savory flavors. It also shines with blue cheeses (like Roquefort or Stilton), washed‑rind cheeses, or fruit‑based desserts—apple tart, pear clafoutis or almond cake with stone fruit. Serve lightly chilled at around 8–10°C (46–50°F); too cold will mute its complexity. Decanting is generally not necessary, but opening the bottle 20–30 minutes before serving and using medium‑sized white wine glasses will help the aromas fully unfurl.
