Description
From one of the Mosel’s most revered estates, the 2022 Willi Schaefer Graacher Domprobst Riesling Kabinett captures everything collectors love about fine German Riesling: purity, precision and effortless charm. Drawn from the steep, slate-rich slopes of the legendary Domprobst vineyard, this Kabinett is both feather-light and intensely expressive. It’s a benchmark example of classic Mosel Kabinett, combining crystalline fruit with a salty, mineral backbone that promises years of graceful evolution.
Tasting Notes
In the glass, the wine shows a pale, shimmering straw color with green reflections, hinting at its youth and vibrant acidity. The nose is cool, refined and slightly restrained at first, with a more “aristocratic” profile than Schaefer’s Himmelreich: flinty minerality, crushed slate, and a deep, dark-toned smokiness intertwined with bright notes of Sicilian lemon, lime zest, white flowers and a whisper of green herbs.
On the palate, it is weightless yet concentrated, gliding across the tongue with a round, juicy and elegant texture. Intense citrus—especially juicy lemon and lime—meets delicate stone fruit, subtle orchard fruit and a fine, mouthwatering salinity. The balance between sweetness and acidity is pitch-perfect, the residual sugar carried effortlessly by piercing freshness and a long, racy, spicy finish. At 7.5% alcohol, it feels almost ethereal, but the structure and mineral depth suggest excellent aging potential: expect it to evolve beautifully over 10–20 years, gaining complexity in honeyed, herbal and petrol notes while retaining its core of citrus and slate.
Production
Graacher Domprobst is one of the Mosel’s great steep-slope vineyards, with blue Devonian slate soils, excellent drainage and a cooler exposition that allows Riesling to ripen slowly while retaining remarkable acidity. The combination of old vines, low yields and precise parcel selection gives the wines their depth and signature minerality. Grapes are hand-harvested in multiple passes (selections) to pick perfectly ripe, healthy fruit at classic Kabinett ripeness, often from higher, cooler parcels. In the cellar, Willi Schaefer works with a light hand: gentle pressing, spontaneous fermentation with indigenous yeasts, and slow, cool fermentations in stainless steel and/or traditional Mosel Fuder (large oak) casks. The wine is bottled with a touch of natural residual sugar, without heavy fining or manipulation, to preserve clarity, finesse and the unmistakable Domprobst character.
Food & Serving
This Kabinett’s interplay of sweetness, acidity and salinity makes it exceptionally versatile at the table. It shines with delicately spiced Asian cuisine (such as sushi, sashimi, Thai salads or mild curries), fresh shellfish, ceviche, lightly smoked fish, and dishes with citrus-based sauces. It is also superb with soft, creamy cheeses, young goat cheese, or simple dishes like roast chicken with herbs and lemon. Serve well-chilled, ideally at 8–10°C (46–50°F), allowing it to warm slightly in the glass to reveal its full aromatic range. Decanting is not necessary, but opening the bottle 15–20 minutes before serving or using a larger white wine glass will help the wine unfold its complexity.

The Willi Schaefer estate is a tiny, family-run domaine in Graach, and one of the most highly respected producers in the entire Mosel. Generations of the Schaefer family have tended some of the region’s finest parcels in Graacher Domprobst and Himmelreich, crafting Rieslings that are prized for their purity, balance and ageworthiness. With just a small annual production, Schaefer focuses on meticulous vineyard work and traditional winemaking, resulting in wines that are consistently lauded by critics and collectors alike. The estate has become a reference point for classic Mosel Riesling—especially in the Kabinett and Spätlese styles—regularly receiving top scores and featuring on shortlists of Germany’s most coveted wines.
