Description
Weingut Ziereisen’s Weißer Burgunder LÜ is a powerful counter‑argument to the idea that Pinot Blanc is a “neutral” grape. Sourced from low-yielding, old vines on Jura limestone in Baden and raised patiently in large wooden casks, this is a textured, characterful white with real depth and tension. Long lees aging and minimal intervention give the wine a distinctive, artisan feel that sets it apart from more conventional Pinot Blancs.
Tasting Notes
In the glass, the wine shows a luminous straw to light golden hue, hinting at both ripeness and extended aging on the lees. The bouquet is surprisingly complex for the variety, with ripe pear and yellow apple at the core, layered with light nutty butter, crushed limestone, and subtle herbal notes.
On the palate, it is concentrated yet finely balanced, with a creamy, lees-driven texture and a firm mineral backbone. Alongside the orchard fruit come delicate hints of tobacco leaf, very discreet vanilla, and a whisper of honey, all wrapped in a gentle, savory smokiness from the long élevage in large oak. The finish is long, tense, and salty-mineral, suggesting very good aging potential: it will drink beautifully now with aeration, but can easily develop further complexity over the next 5–8 years, gaining more nuttiness and tertiary nuance.
Production
The grapes for the Weißer Burgunder LÜ come from approximately 25-year-old vines rooted in classic Baden Jura limestone with a loess topsoil, a terroir that naturally lends freshness, salinity, and structure. The vineyard is farmed organically in practice (though not certified), with strong yield reduction and strictly selective hand-harvesting to ensure optimal ripeness and healthy fruit. After picking, the grapes undergo a period of skin contact, then are slowly and gently pressed for several hours in an old basket press. Fermentation takes place spontaneously with indigenous yeasts in large wooden casks, followed by an extended 22 months of aging on the fine lees. The wine is bottled unfiltered, with minimal intervention, preserving its full texture and aromatic complexity.
Food & Serving
This expressive Pinot Blanc is a versatile gastronomic partner that shines with rich yet refined dishes. It pairs beautifully with roasted poultry, veal in cream sauces, pork tenderloin, and classic German cuisine such as Schweinebraten or Schnitzel. It also complements buttery seafood (scallops, poached turbot, trout with almonds), white asparagus, mushroom dishes, and nutty alpine cheeses. Serve at 10–12 °C to reveal both its freshness and its creamy mid-palate. A short decant of 30–60 minutes in a medium-sized carafe is recommended, especially in its youth, to open up the more subtle herbal, nutty, and mineral notes.
