The “10 hoch 4” name hints at an elevated, almost exponential expression of Spätburgunder, reflecting both ambition and meticulous craftsmanship.

Tasting Notes
In the glass, the 2019 Jaspis 10 hoch 4 shows a luminous, medium ruby color with a slight garnet hue at the rim, signaling both concentration and elegance. The nose is intricate and pure, with aromas of wild red cherries, raspberry and cranberry, interwoven with notes of rose petals, dried herbs, crushed stones, subtle smoked tea, and a delicate touch of fine oak spice. On the palate, this Spätburgunder is precise and tightly focused, with a vibrant core of red fruit wrapped in a saline, limestone-driven minerality. Silky yet firm tannins provide structure, while bright, energetic acidity keeps everything lifted and long. Production

Harvest is typically done by hand, allowing strict selection of perfectly ripe, healthy berries in the vineyard and again at the sorting table. Fermentation is carried out with a gentle, traditional approach—often with a portion of whole clusters—to preserve finesse, complexity, and terroir expression. The wine is then aged for an extended period in high-quality oak (often largely used barrels, with a carefully judged portion of new wood) to add structure and subtle spice without overpowering the fruit, and is bottled with minimal intervention to retain its authenticity and character.

Food & Serving
This is a refined, gastronomic Spätburgunder that pairs beautifully with dishes built on nuance rather than power. Try it with roasted duck breast, veal tenderloin, pigeon, or delicately gamey meats such as venison with wild mushrooms.
