Weingut Ziereisen Jaspis Bürgin Spätburgunder Alte Reben 2019 is a powerful, Burgundy-inspired Pinot Noir from one of Baden’s most dynamic family estates. Sourced from very old vines (“Alte Reben”) in the Bürgin site, this cuvée captures the depth and tension that limestone-rich terroir can give to Spätburgunder. Crafted in a decidedly artisanal, low-intervention style, it offers both serious complexity and a long life ahead in the cellar.

Tasting Notes
In the glass, the 2019 Jaspis Bürgin shows a deep, luminous ruby core with garnet highlights at the rim, signaling both concentration and early development. The nose is refined yet expressive, with layers of wild red berries, black cherry and pomegranate intertwined with forest floor, dried rose petals, crushed herbs and a subtle, smoky mineral note. Fine oak seasoning adds hints of cocoa, cedar and sweet spice without ever dominating the fruit. On the palate, this is a structured, site-driven Spätburgunder with impressive precision. Juicy red and dark cherry, raspberry and cranberry are framed by vibrant acidity and finely woven, chalky tannins. Savory undertones of earth, graphite, black tea and a touch of game add depth and complexity as the wine opens in the glass. The finish is long, saline and subtly spicy, suggesting strong aging potential. While already engaging with some air, this 2019 will evolve beautifully over the next 8–15 years, gaining further aromatic nuance and textural harmony.

Production
The Jaspis Bürgin Alte Reben comes from old-vine parcels in Baden’s Markgräflerland, where limestone and marl soils lend both finesse and a distinct mineral backbone to Spätburgunder. Ziereisen works with low yields and meticulous, largely manual vineyard care, including hand-harvesting to ensure only perfectly ripe clusters reach the cellar. Fermentation is typically spontaneous with indigenous yeasts in traditional wooden vats, often involving a long maceration to extract fine tannins rather than brute power. The wine is then aged for an extended period—commonly close to two years—in small French oak barrels (a mix of new and used), and is bottled with minimal fining or filtration and restrained sulfur, preserving the character of site and vintage.

Food & Serving
This is a gastronomic Pinot Noir that shines alongside refined, savory dishes: think roasted duck breast with cherry glaze, herb-crusted lamb, venison loin, or mushroom-based cuisine such as wild mushroom risotto or porcini tagliatelle. It also pairs beautifully with game birds, truffled poultry, and aged Alpine or Burgundian-style cheeses. Serve at 14–16 °C to highlight its aromatic detail and freshness. Decanting for 1–2 hours is recommended in the wine’s youth to allow the bouquet and texture to fully unfold; older bottles can be gently opened and poured without extended decanting.

Over the past decades, Hanspeter and Edel Ziereisen have earned a reputation as pioneers of terroir-driven, low-intervention wines, particularly for Spätburgunder, Gutedel and other Burgundian varieties.
