Tasting Notes
In the glass, the 2021 Blauer Spätburgunder RH shows a clear, bright ruby-red color with delicate garnet reflections at the rim. The nose opens with fragrant red cherry, wild strawberry and redcurrant, supported by notes of rose petal, dried herbs, crushed stone and a gentle smoky-spicy edge from its time in wood. Hints of forest floor and subtle baking spice add complexity as it evolves in the glass. On the palate, the wine is elegant and medium-bodied, with a precise, refreshing acidity that lifts the juicy red fruit. Fine, powdery tannins frame flavors of sour cherry, pomegranate, raspberry and a touch of cranberry, layered with nuances of black tea, clove and a faint, savory earthiness. The finish is long, cool and mineral, leaving a persistent impression of red fruit and spice. Enjoyable now with a short decant, this 2021 vintage has the structure and balance to develop further complexity over the next 5–8 years in a good cellar.

Production
The Blauer Spätburgunder RH 2021 is sourced from limestone- and loess-rich sites in Baden, where the relatively warm, sunny climate is moderated by cool evening breezes, helping the grapes retain freshness and aromatic precision. Vines are farmed with careful, low-intervention methods, focusing on healthy soils and controlled yields to ensure concentration and balance. Grapes are harvested by hand at optimal ripeness, carefully sorted, and typically fermented spontaneously with native yeasts in traditional vats. Ziereisen favors gentle extraction, followed by maturation in used wooden barrels or large foudres, allowing the Pinot fruit and the stony, mineral character of the terroir to shine without being dominated by new oak. Bottling is done with minimal fining and filtration, in keeping with the estate’s artisan, terroir-focused philosophy.

Food & Serving
This Spätburgunder is a versatile partner at the table, pairing beautifully with dishes such as roasted chicken, duck breast with cherries, veal cutlets, pork tenderloin, mushroom risotto, charcuterie and soft to semi-hard cheeses like Tomme, Comté or mild goat cheese. For optimal expression, serve at 14–16°C (57–61°F), slightly cooler than room temperature, in a Burgundy bowl or large Pinot Noir glass. Young bottles benefit from a brief decant of 30–45 minutes to open up the aromatics and soften the tannins, while more mature bottles should be handled gently and decanted only to remove sediment if needed.

Weingut Ziereisen is a family-run estate based in Efringen-Kirchen in southern Baden, not far from the Swiss and French borders, an area strongly influenced by limestone-rich soils and a relatively warm, dry microclimate. Over the past decades, Hanspeter Ziereisen and his family have transformed the winery into one of the most respected artisanal producers in the region, known especially for characterful Spätburgunder, Gutedel and other varieties that combine Burgundian sensibility with a distinctly Baden identity. Working with low yields, hand harvesting, spontaneous fermentations and patient élevage in wood, the estate has played a key role in raising the profile of Baden as a serious wine region. Their wines are regularly praised by European critics and enthusiasts for their individuality, aging capacity and faithful expression of terroir.
