Tasting Notes
In the glass, this wine shows a clear ruby-red color. The nose is bright and inviting, offering aromas of cherry, raspberry, and red forest berries, layered with subtle spice and a gentle hint of forest floor. The palate is fresh, silky, and harmonious, with fine tannins, lively acidity, and a juicy finish that keeps the wine energetic and precise. It is charming now for its fruit-forward, elegant style, but it should also develop nicely over the next few years, gaining a little more complexity and nuance with time.

Production
The grapes come from calcareous vineyards around Heitersheim in Markgräflerland, where Baden’s warm days and cool nights help preserve freshness while building ripe Pinot Noir character. Weingut Zähringer farms biodynamically, with an emphasis on healthy soils and expressive vineyard work. The wine is made with spontaneous fermentation and gentle vinification to protect its natural fruit and finesse. A portion is matured in large traditional oak casks, adding structure and depth without masking the wine’s fresh, transparent profile.

Food & Serving
This Spätburgunder is a versatile partner at the table, especially with roast duck, grilled salmon, mushroom dishes, veal, poultry, or mild game. It also works beautifully with earthy vegetarian dishes and semi-hard cheeses. Serve it slightly cool at around 14–16°C, and decanting is optional but can help open the wine if served in its youth.

Weingut Zähringer is a family-owned estate in Heitersheim, Baden, with roots dating back to 1844. Now led by the sixth generation, Fabian Zähringer, the winery has long been a pioneer in sustainable viticulture, converting to organic farming in 1987 and becoming Demeter-certified biodynamic in 2010. The estate is highly regarded for elegant, terroir-focused wines with a clear, precise style, especially its Spätburgunder and Chardonnay. Zähringer’s reputation rests on combining Baden’s warm climate, limestone soils, and meticulous biodynamic work to produce wines with purity, structure, and regional character.
