Production
The Blaufränkisch grapes for A Glimmer of Hops come from Franz Weninger’s biodiverse vineyards in Burgenland, where wild hops spontaneously took root among the vines – an unexpected gift from the local ecosystem. The grapes are selectively hand-harvested, then directly pressed to produce a delicate rosé must. Wild hop cones are added already at the beginning of spontaneous fermentation, which takes place over about two weeks in amphora with the uncooked hops soaking in the juice. After fermentation, the wine is aged and undergoes natural malolactic conversion in a concrete egg, which enhances texture and preserves purity of fruit. It is bottled unfiltered, unfined, and without added sulfur, staying true to a minimal-intervention philosophy and expressing the vineyard’s natural character with maximum transparency.

This distinctive rosé pairs brilliantly with dishes that can play with both its fruity core and its subtle hop bitterness: think charcuterie boards, cured meats, grilled sausages, or lightly spiced tapas.
