Tasting Notes
In the glass, the 2020 Vom Granit shows a pale straw to light lemon color with subtle green reflections, suggesting freshness and youthful vitality. The nose is delicately expressive, with notes of crisp green apple, pear, and white peach layered over hints of citrus zest, white flowers, and a fine, stony minerality that reflects its granite origin.
On the palate, the wine is dry, medium-bodied and finely textured, with a vibrant line of acidity that keeps everything taut and refreshing. Flavors of orchard fruit, lemon pith and a touch of ripe melon are framed by a clear mineral backbone and a gentle creaminess from the Chardonnay component. The finish is clean, saline and persistent, making it both versatile at the table and highly drinkable on its own. While it is delicious now for its purity and freshness, it should continue to evolve gracefully over the next 3–5 years, gaining a bit more complexity and roundness with short-term cellaring.
Production
The Vom Granit cuvée is sourced from vineyards in the Hessische Bergstraße, a small but historic wine region characterized by steep slopes, cool climate influences and granite-dominated soils. This rocky terroir lends the wine its linear structure, clarity and distinct mineral edge. Grapes are typically hand-harvested at optimal ripeness to preserve delicate aromas and natural acidity, then gently pressed. Fermentation takes place in temperature-controlled conditions, most often in stainless steel and/or neutral large-format vessels, to emphasize freshness and precision rather than overt oak influence. The Chardonnay and Weißburgunder are vinified to complement each other—Chardonnay bringing subtle breadth and texture, and Pinot Blanc adding lift, finesse and crisp fruit character—before being carefully blended and rested on fine lees to enhance mouthfeel and complexity.
Food & Serving
This white cuvée is a natural partner for refined yet uncomplicated cuisine. It pairs beautifully with freshwater fish, grilled or poached white fish, shellfish, sushi, light poultry dishes, asparagus, spring vegetables, and fresh goat’s or soft-ripened cheeses. It also works well with lightly creamy pasta or risotto, where its acidity and mineral structure cut through richness. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatics and texture to unfold. Decanting is not essential, but opening the bottle 15–20 minutes before serving in medium-sized white wine glasses will help the wine fully express its subtle, granite-driven nuances.
