Tasting Notes
In the glass, this wine shows a deep ruby core with a youthful, almost violet rim that hints at its energy and concentration. The nose is inviting and complex: aromas of rosehip, sour cherry and black berry fruit unfold alongside notes of milk chocolate, nougat and the varietal hallmark of grilled red pepper. Subtle hints of toasted rye bread, smoked bacon, rosemary and fresh sage add a savory, herbal dimension.
On the palate, the Cabernet structure is clear, yet wrapped in supple, velvety tannins. Dark berry fruit is layered with cocoa, gentle spice and a finely judged touch of oak, which is well integrated rather than dominant. Production
The grapes for this Cabernet Sauvignon come from organically farmed vineyards in Rheinhessen, where loess and clay-rich soils provide good water retention and support slow, even ripening. As a certified organic estate, Familie Sander works without synthetic chemicals, focusing on biodiversity and soil health to allow the vines to express their terroir. The hand-harvested fruit is gently pressed in the estate’s lovingly restored, 80-year-old wooden press (“Holzkelter”), a nod to traditional craftsmanship that also ensures a particularly careful extraction. Fermentation takes place with temperature control to preserve fruit purity, followed by extended maturation in barrique, where the wine rests to gain structure, polish and aromatic complexity before bottling.
Food & Serving
This Cabernet Sauvignon is a natural partner for hearty, savory dishes: think roasted lamb with rosemary, grilled beef or venison, braised short ribs, or rich stews with root vegetables and herbs. It also pairs beautifully with mushroom ragouts, lentil casseroles, charcuterie, and aged hard cheeses such as Comté or Manchego. Serve at 16–18 °C; for optimal expression, open the bottle 30–60 minutes in advance or decant briefly to allow the aromas to unfurl and the tannins to soften.
