Tasting Notes
In the glass, the wine shows a translucent ruby to light garnet hue, with a brilliant, vibrant rim that hints at both freshness and finesse. The nose opens with pure red cherry, wild strawberry and red currant, layered with rose petals, a touch of pomegranate, and delicate spice. With air, more complex aromas emerge: crushed chalk, dried herbs, subtle forest floor and a fine, smoky-mineral note that’s very typical of limestone sites. On the palate, it is precise and medium-bodied, with a cool, linear backbone. Juicy red berries and sour cherry are wrapped in silky yet persistent tannins, balanced by a vibrant, mouthwatering acidity. Hints of cranberry, fine black tea, and a saline-mineral edge stretch out on a long, refined finish. The 2021 vintage’s naturally fresh character gives this wine excellent aging potential; it can be enjoyed now after a short decant, but will evolve beautifully over 6–10 years, gaining more savoury and truffly nuances.

Production
The Leistadter Kalkofen vineyard sits on classic Pfalz limestone and marl soils, which lend the Spätburgunder its tension, precision and subtle saltiness. The site’s well-drained, calcareous subsoil and slightly elevated position provide excellent ripening conditions while preserving acidity, especially valuable in a cooler, more structured year like 2021. Weingut Rings farms these vines organically (Bio), with careful canopy management and strict yield control to ensure concentrated, healthy fruit. Harvest is done by hand in small crates, parcel by parcel, at optimal ripeness. In the cellar, the grapes are gently sorted, often partially destemmed, and fermented with native yeasts in open vats, with delicate punch-downs or pump-overs to extract fine tannins rather than power. The wine is then aged in a selection of small oak barrels (a mix of new and used French barriques) to bring structure and micro-oxygenation without overpowering the fruit or terroir expression, before being bottled with minimal intervention.

This is a highly versatile, food-friendly Spätburgunder that shines with refined dishes rather than heavy sauces. Pair it with roasted poultry (duck breast, guinea fowl, or corn-fed chicken), veal schnitzel with wild mushrooms, pork tenderloin, or herb-crusted lamb. It also works beautifully with game birds, charcuterie, and earthy vegetarian dishes like mushroom risotto, truffled pasta, or baked root vegetables with thyme. Semi-soft cheeses such as Comté, aged Gouda, or mild washed-rind cheeses make excellent partners. Serve at 14–16°C; a slight chill helps emphasize freshness and precision. Decant for 30–45 minutes in its youth to allow the aromatics to unfurl, or simply give it a good swirl in large Burgundy stems if you prefer a subtler opening.
