Tasting Notes
In the glass, the wine presents a bright, translucent ruby-red hue with a delicate, youthful rim. The nose opens with pure red cherry and wild raspberry, followed by notes of redcurrant, pomegranate, rose petals and a hint of cranberry. Subtle layers of spice—white pepper, clove and a touch of star anise— mingle with earthy undertones, crushed stone and a whisper of fine oak.
On the palate, it is precise and focused, with a silky texture and vibrant acidity that carries the red-fruited core. Crunchy cherry, raspberry and wild strawberry are framed by fine-grained tannins and a mineral backbone that gives length and definition. Hints of forest floor, dried herbs and delicate smoky notes emerge with air, adding complexity without heaviness. While already approachable with some aeration, this 2021 has the structure to develop gracefully over the next 6–10 years, gaining more tertiary nuances and silkier tannins.
Production
Kallstadter Steinacker is a limestone- and loess-rich site in northern Pfalz, where cool evening breezes and well-drained soils create ideal conditions for finely etched, aromatic Spätburgunder. Weingut Rings typically farms these vineyards sustainably, with low yields and meticulous canopy management to ensure optimal ripeness and concentration. Grapes are hand-harvested at optimal phenolic maturity, then carefully sorted to retain only perfectly healthy clusters. Vinification usually involves a proportion of whole bunches to add aromatic lift and structure, followed by a gentle, traditional fermentation with indigenous yeasts. The wine is then aged in small oak barrels (often a restrained use of new oak) to refine texture and integrate tannins, without masking the clarity of fruit or the distinctive minerality of the Steinacker site.
Food & Serving
This Spätburgunder is a versatile partner at the table, pairing beautifully with roasted poultry, duck breast with cherries, veal schnitzel, pork tenderloin, grilled salmon or tuna, as well as mushroom dishes, truffled risotto and mild to medium-aged cheeses. Serve at 14–16°C to highlight its finesse and aromatic complexity. Decanting for 30–60 minutes in its youth is recommended to allow the wine to open and reveal its full spectrum of red fruit, spice and mineral notes.
