Weingut Rings typically farms these vineyards sustainably, with low yields and meticulous canopy management to ensure optimal ripeness and concentration. Grapes are hand-harvested at optimal phenolic maturity, then carefully sorted to retain only perfectly healthy clusters. Vinification usually involves a proportion of whole bunches to add aromatic lift and structure, followed by a gentle, traditional fermentation with indigenous yeasts. The wine is then aged in small oak barrels (often a restrained use of new oak) to refine texture and integrate tannins, without masking the clarity of fruit or the distinctive minerality of the Steinacker site.
