Tasting Notes
In the glass, the wine shows a pale to medium straw-yellow color with green reflections, signaling youthful tension and freshness. The nose is initially restrained and finely etched, opening with cool, stony minerality, delicate citrus zest, yellow orchard fruits and hints of white peach. Subtle herbal nuances—think fresh coriander, marjoram and wild meadow herbs—interweave with a faint smoky, almost bacon-like savoriness and a touch of white pepper.
On the palate, it is bone dry, firmly structured and tightly wound, with a filigree, linear profile. A ripe yet herb-tinged fruit core—citrus, mirabelle and a whisper of stone fruit—is carried by vibrant, finely chiselled acidity. The hallmark of Saumagen shows in the tactile minerality and fine, persistent saltiness on the long, focused finish. Still youthful, the wine will benefit greatly from a few years of bottle age, with excellent aging potential of 10–15 years or more under proper cellaring, gaining complexity, depth and aromatic breadth over time.
Production
The Saumagen vineyard sits on the limestone-rich slopes at the foot of the Haardt in the Pfalz, exposed to the south and southeast for maximum morning and midday sun. The topsoil is shaped by loess and limestone marl, while pure limestone rock in the subsoil ensures excellent drainage and a marked mineral character in the wines. Under certified organic cultivation, the Rings brothers work with low yields and careful, largely manual vineyard work, including hand harvesting in multiple passes to select only ripe, healthy Riesling grapes. In the cellar, the must is handled gently and fermented slowly—often with natural or minimally added yeasts—in stainless steel and/or large traditional wooden casks, with extended time on the fine lees to build texture and complexity while preserving the wine’s precision and cool, mineral profile.
Food & Serving
This Riesling Saumagen Großes Gewächs is a natural partner for refined cuisine: think ceviche, sashimi, tempura prawns or simply grilled sea bass with lemon and herbs. It also shines with classic German dishes such as veal schnitzel, roasted poultry, or light pork preparations, and handles nuanced spice in Asian-inspired dishes, especially those with ginger, lemongrass or mild chili heat. Serve at 9–11 °C to highlight its tension and aromatics; if possible, decant 30–60 minutes before serving in its youth to allow the wine to open up and reveal its full mineral and herbal complexity.
