Weingut Rings Riesling Saumagen Großes Gewächs 2022 is a powerful, finely etched dry Riesling from one of Germany’s most iconic limestone sites in the Pfalz. Sourced from the steep, south and south-east facing VDP.Große Lage Saumagen, this certified-organic Großes Gewächs captures the vineyard’s signature combination of cool precision, chalky minerality and fine, salty finish. Tasting Notes
In the glass, this Riesling shows a pale straw to light lemon color with green reflections, signaling both youth and freshness. The nose opens with lime zest, white grapefruit and green apple, backed by crushed stone, chalk dust, and delicate herbal notes of lemon balm and fennel, with hints of white flowers and a subtle smokiness. On the palate, the wine is tightly focused and linear, with a filigree structure that balances crystalline acidity and a dense, chalky core. Flavors of citrus, crunchy orchard fruit and underripe peach intertwine with a distinct stony minerality and a fine, mouthwatering salinity that stretches long into the finish. The texture is cool and precise rather than opulent, emphasizing finesse and tension over weight. Still very youthful in 2022, this Großes Gewächs has excellent aging potential; it should evolve beautifully over 10–15 years, gaining complexity, gentle creaminess and tertiary notes of honey, smoke and dried citrus while maintaining its spine of minerality.

Production
The Saumagen vineyard sits on the slopes above Kallstadt at the foot of the Haardt, with south and south-east exposures that maximize morning and midday sun while benefiting from cooling night air flowing down from the forested hills. The topsoil is a mix of loess and calcareous marl, underpinned by solid limestone rock, giving low yields of intensely flavored, mineral-driven Riesling. Weingut Rings farms this VDP.Große Lage organically, with meticulous hand work in the vineyard and selective hand-harvesting at optimal ripeness. In the cellar, the fruit is gently pressed, and fermentation typically occurs with natural yeasts in stainless steel and/or large traditional oak, allowing a slow, controlled vinification that preserves purity while adding subtle texture. Extended time on fine lees enhances complexity, structure and the characteristic cool, stony profile of Saumagen, without masking the clarity of the terroir.

Food & Serving
This dry, mineral-drenched Riesling is an outstanding partner for refined, subtly aromatic cuisine. Think sashimi, ceviche or yellowtail crudo, oysters and other shellfish, lightly grilled sea bass or turbot, as well as fine vegetable dishes such as asparagus, artichokes or fennel with citrus and herbs. It also excels with modern takes on German classics—veal schnitzel, trout with almonds, or delicately seasoned pork dishes—where its acidity and salinity cut through richness. Serve at 9–11 °C (48–52 °F) in a generous white wine or Riesling glass to allow the aromas to unfold. Young bottles will benefit from 30–60 minutes in a decanter to open up the nose and soften the tightly wound structure.
