The Mittelheimer St. Nikolaus site lies directly by the Rhine, where the river shapes the microclimate: it reflects additional sunlight into the vineyard, promotes constant air circulation, and acts as both a heat reservoir in cooler periods and a cooling influence during heatwaves. The soils are dominated by sandy, calcareous loess, providing excellent drainage and imparting both finesse and a marked mineral character to the wines. Here grow the estate’s oldest Riesling vines, some over 65 years old, naturally yielding few but highly concentrated, small berries. The grapes for this Großes Gewächs are carefully hand‑harvested at optimal ripeness, strictly selected in the vineyard, then gently pressed over several hours to preserve purity and extract fine phenolics. The must undergoes spontaneous fermentation with native yeasts, without any oenological additives or interventions. The wine is then matured for around 16 months on the full lees, allowing it to gain texture, depth and complexity before being bottled with minimal handling.

This dry, concentrated Rheingau Riesling pairs beautifully with refined cuisine. It is an excellent match for delicately prepared seafood such as scallops, turbot, or poached sole, as well as fine freshwater fish like trout or char. It also shines alongside poultry dishes, veal in light sauces, and sophisticated vegetable or herb‑driven dishes—think asparagus, fennel, or dishes with citrus and fresh herbs. Mature soft and semi‑hard cheeses, especially those with a creamy yet salty profile, also work well. Serve at 9–11 °C to highlight its precision and aromatic complexity. Young bottles will benefit from a short decant of 30–60 minutes to open up the nose and soften the structure slightly.
