Tasting Notes
In the glass, the 2021 Oestricher Klosterberg shows a pale lemon hue with green highlights, suggesting both youth and tension. The nose is layered and slow-revealing rather than showy: you’ll find hints of dried orchard fruit and citrus peel intertwined with notes of chamomile, honeycomb, dried herbs and a distinct earthy-mineral tone, reminiscent of warm stone after rain. Subtle tea-like nuances call to mind fine oolong, where gentle oxidative notes sit alongside a cool, fresh lift. Primary fruit takes a back seat to a more contemplative, savory, and stony aromatic profile. On the palate, the wine is taut yet silky, with a lively, finely woven acidity that feels agile rather than sharp. Flavors echo the nose—dried apricot and yellow plum, herbal infusions, a whisper of honey and spice—wrapped in a precise, mineral-driven framework that stretches long across the finish. It is a Riesling that can move through different phases in the glass, sometimes more open, sometimes more reserved, and benefits from a bit of patience and air. While already enjoyable for its structure and finesse, the 2021 has excellent aging potential; over the next 8–12 years it should gain further depth, aromatic complexity, and textural harmony.

Production
The Oestricher Klosterberg vineyard sits on the slopes above Oestrich in the heart of the Rheingau, where sun-exposed parcels and well-drained, stony soils give Riesling both ripeness and precision. Farmed organically and biodynamically, the vines are tended by hand with a strong focus on soil health and low yields, allowing the site’s character to shine through. Harvest is done manually, with strict selection of perfectly ripe, healthy grapes picked in small batches to preserve freshness. In the cellar, P.J. Kühn favors a gentle, minimalist approach: slow, natural fermentations—often with ambient yeasts—take place in stainless steel and/or large traditional wooden casks, followed by extended time on the lees. The result is a dry Rheingau Riesling that captures both the energy of the vintage and the deep, textural complexity that is typical of Klosterberg.

Food & Serving
This refined, savory-leaning Riesling is a versatile partner at the table, particularly with dishes that echo its herbal and mineral tones. It pairs beautifully with freshwater fish, lightly smoked trout, sashimi or ceviche, as well as roasted poultry, veal in light cream sauces, or vegetable-driven dishes such as asparagus, fennel, or leek tarts. Asian-inspired cuisine with subtle spice and aromatics—dim sum, steamed fish with ginger and spring onion, or lightly spiced Thai salads—also works well. Serve at 9–11 °C, slightly cooler for aperitif-style drinking and a touch warmer for food pairings to allow the aromatics to unfold. Decanting for 30–60 minutes, or at least giving the wine some time in the glass, is recommended to help it move beyond its initial restraint and reveal its full spectrum of aromas.
