Tasting Notes
In the glass, the 2021 Doosberg GG shows a bright, concentrated lemon-gold hue, hinting at both ripeness and extract. The nose is layered and slowly unfurling: citrus zest, ripe peach and mirabelle are interwoven with notes of crushed slate, wild herbs, fennel seed, and a subtle smoky, flinty edge. Hints of white flowers and a saline breeze underline its cool Rheingau origin. On the palate, this is taut yet deep, with a firm backbone of acidity framing dense, finely etched fruit. Think lime, greengage and quince, wrapped around a powerful mineral core, with a delicate phenolic grip that lends structure and length. The finish is long, dry and resonant, with a gentle bitterness reminiscent of grapefruit pith and herbal tea, promising superb development in bottle. While already impressive in its youth, this Großes Gewächs is built for aging and will reward 8–15 years (and more) of cellaring, gaining complexity, honeyed nuances and additional textural harmony over time.

Production
The Doosberg vineyard stretches up the eastern side of Oestrich, from the banks of the Rhine to around 150 meters above sea level, with a south to southwest exposure that captures abundant light while still benefiting from the river’s cooling influence. The soils are deep, carbonate-rich loess and loam over quartzite, combining water-holding capacity with excellent drainage and a pronounced mineral character in the wines. Weingut P.J. Kühn farms these parcels organically and biodynamically, harvesting by hand to ensure rigorous selection of perfectly ripe, healthy Riesling grapes. After gentle pressing, the must ferments spontaneously with native yeasts, often partly in traditional large oak casks and partly in stainless steel, before the wine is left to mature for an extended period first on the full lees and then on the fine lees. Only after around two years of élevage and additional bottle rest is the Doosberg Großes Gewächs released, allowing it to gain aromatic complexity and textural depth before it reaches the market.

Food & Serving
This structured, dry Rheingau Riesling pairs beautifully with refined dishes that echo its intensity and minerality: think sashimi or ceviche, grilled sea bass, poached turbot, or scallops with citrus butter and fennel. It also shines alongside classic German fare such as Zander (pike-perch), roasted poultry, veal in light sauces, and sophisticated vegetable dishes, particularly asparagus, artichokes and herb-driven cuisine. Serve at 9–11 °C to highlight its precision and aromatic detail. In its youth, decanting for 30–60 minutes can help the wine open and reveal its full complexity; with bottle age, a gentle splash-decant just before serving is sufficient to remove any sediment and let the aromas blossom.
