Sourced exclusively from Siebeldingen’s famed “Im Sonnenschein” site, it captures the cool elegance and fine structure that define Rebholz’s style. Certified organic and crafted parcel by parcel, this Ortswein is all about clarity, finesse and an authentic expression of its Muschelkalk origins.

Tasting Notes
In the glass, the 2024 Weißer Burgunder appears pale lemon with greenish reflections, underscoring its youthful freshness and linear style. The nose is cool and restrained at first, then unfolds with aromas of crisp green pear, white blossom and delicate citrus peel, supported by a fine nuttiness reminiscent of blanched almonds and a subtle chalky minerality. On the palate, this Pinot Blanc is light-footed yet precise, with a finely woven texture and a refreshing, almost crystalline acidity. The fruit profile leans towards green and yellow orchard fruits—pear, apple and a hint of quince—wrapped in a subtly creamy mid-palate that never becomes heavy. A saline, limestone-driven backbone gives the wine length and focus, leading into a clean, mineral-inflected finish. The 2024 vintage is lighter and more filigree than the warmer 2022 and 2023 bottlings, making it especially vibrant in its youth. Enjoy it over the next 3–5 years for peak freshness and detail, though its structure and acidity will allow it to develop additional nuance in bottle.

Production
The grapes for this wine come from Muschelkalk (shell-limestone) soils in Siebeldingen’s “Im Sonnenschein” vineyard, a site known for giving wines tension, precision and a distinctive mineral signature. As is tradition at Weingut Ökonomierat Rebholz, the organically farmed grapes are hand-harvested at optimal ripeness, then carefully destemmed. They are left for about a day on the skins to gain subtle structure and aromatic complexity before being gently pressed. After natural sedimentation, the must is fermented and aged in stainless steel to preserve purity and freshness. Each parcel within the vineyard is vinified separately, with the final cuvée assembled only after maturation, allowing the team to fine-tune the exact expression of Siebeldingen’s Muschelkalk terroir in every vintage.

Food & Serving
This elegant Weißer Burgunder is a versatile food partner, particularly well-suited to fine, subtly flavored dishes. It pairs beautifully with freshwater fish, ceviche, steamed shellfish, grilled sea bass, as well as poultry in light sauces, spring vegetables, asparagus, or delicate pasta with herbs and mild cheeses. Its nutty, mineral edge also works well with light vegetarian dishes and simple charcuterie. Serve well-chilled but not ice-cold, ideally at 9–11 °C, to allow the floral and mineral notes to open up. Decanting is not essential, but pouring it into a medium-sized white wine glass and giving it a few minutes in the glass will help the wine show additional nuance.
