Sourced from the famed Mandelberg vineyard in Birkweiler, this dry white combines purity of fruit with a pronounced limestone signature and remarkable aging potential. It captures the Rebholz philosophy perfectly: uncompromisingly dry, terroir-focused, and crafted for both immediate pleasure and long-term cellaring.
Tasting Notes
In the glass, this Weißer Burgunder shows a luminous, pale straw color with greenish highlights, indicating its youth and freshness. The nose is immediately expressive yet refined, with aromas of ripe yellow pear, quince, and mirabelle, layered with exotic hints of papaya and pineapple. Subtle floral notes, a touch of citrus zest, and a cool, chalky minerality rise in the background, giving the wine both depth and tension.
On the palate, the wine is dry, elegant, and focused, with a fine, linear structure. The ripe fruit from the nose translates into flavors of pear, white peach, and yellow apple, underpinned by a stony, almost salty mineral backbone. The acidity is vibrant but finely integrated, lending length and precision rather than sharpness. A delicate creaminess from extended lees contact adds texture without ever weighing the wine down. The finish is long, clean, and marked by citrus, crushed shell and chalk notes, suggesting excellent aging potential. In a good cellar, this Großes Gewächs should evolve beautifully over 8–12 years, gaining complexity, nuttiness, and additional depth of tertiary aromas.
Production
The Mandelberg vineyard in Birkweiler is classified as a VDP.Große Lage and is known for its sheltered east-facing exposition and sparse Muschelkalk (fossil-rich limestone) soils, formed roughly 240 million years ago. The vines here root deeply in the rocky subsoil, forcing them to work hard for water and nutrients, which translates into concentration and a distinctive mineral profile in the finished wine. In the challenging 2023 vintage, the grapes were meticulously and selectively harvested by hand, an especially labor-intensive but crucial step to ensure only perfectly ripe and healthy clusters were used. Following the estate’s hallmark approach, the grapes were destemmed and gently macerated, then left to rest at low temperature on the skins for about 24 hours. This cold maceration encourages aromatic complexity and structure. After pressing, the must was initially exposed to oxygen (“oxidative imprinting”), before fermentation and maturation took place in a reductive environment in stainless steel tanks. This combination preserves purity, tension, and the clear expression of the Mandelberg terroir while avoiding any overt oak influence.

This structured yet elegant Weißer Burgunder is highly versatile at the table and shines with refined, subtly flavored dishes. It pairs beautifully with shellfish such as scallops, prawns, and lobster, as well as with grilled or poached white fish, especially when accompanied by light butter or citrus-based sauces. Poultry dishes—like roast chicken or guinea fowl with seasonal vegetables—also work very well, as do veal, pork tenderloin, or fine cured hams. Creamy risottos, mild goat’s and cow’s milk cheeses, and vegetable-driven cuisine (asparagus, fennel, or artichokes prepared with finesse) further emphasize its mineral elegance. Serve at 9–11 °C to highlight freshness and precision; for young bottles, a brief decant of 30 minutes can help the aromatics open up. As the wine matures, slightly warmer serving (around 11–12 °C) and a gentler, shorter aeration will allow its evolved complexity to fully emerge.

Weingut Ökonomierat Rebholz, based in Siebeldingen in the southern Pfalz, is considered one of Germany’s benchmark estates for uncompromisingly dry, terroir-driven wines. The family has been growing grapes there for generations, and the estate’s modern reputation was largely shaped by the late Ökonomierat Eduard Rebholz, who championed naturally dry wines long before they became widely accepted in Germany. Today, the Rebholz family continues this philosophy, working organically (and in parts biodynamically) and placing great emphasis on expressing the individuality of each vineyard. Their holdings include several top VDP.Große Lagen, among them Mandelberg in Birkweiler, from which they craft some of the most precise and age-worthy Pinot Blancs in the country. The estate is a long-standing member of the VDP (Verband Deutscher Prädikatsweingüter) and is regularly awarded high scores and accolades from German and international critics alike, underscoring its status as a leading producer in the Pfalz and beyond.
