Weingut Knipser Chardonnay *** 2021 is one of the estate’s flagship white wines, crafted in a distinctly Burgundian style from meticulously selected Chardonnay grapes in the Pfalz. This is a serious, cellar‑worthy wine that balances ripe fruit with finely judged oak and a precise, mineral backbone. Long known as one of Germany’s Chardonnay pioneers, Knipser showcases just how world‑class this variety can be outside of Burgundy.
Tasting Notes
In the glass, the Chardonnay *** 2021 shows a bright, medium‑gold color with youthful reflections. The nose is layered and inviting, opening with notes of ripe pear, yellow apple and white peach, supported by citrus zest, hazelnut, toasted brioche and a touch of vanilla and fine oak spice. With a bit of air, more complex aromas of chalk, wet stone and a hint of smoke begin to emerge.
On the palate, this is full‑bodied yet finely structured, with a tense, linear acidity that lifts the generous fruit. Flavors of ripe stone fruit, lemon curd and baked apple are woven together with subtle creaminess, delicate butter notes and well‑integrated oak. The texture is silky but energetic, leading into a long, savory finish marked by saline minerality and a discreet hint of spice. Still youthful in 2021, this cuvée has excellent aging potential; expect it to gain further complexity and tertiary notes (nuts, honey, brioche) over 6–10 years in a proper cellar.
Production
The Chardonnay *** is sourced from Knipser’s top vineyard parcels in the northern Pfalz, where limestone‑rich soils and a relatively warm, dry climate give naturally ripe grapes with firm acidity and a pronounced mineral line. Yields are kept low, and the grapes are hand‑harvested in small boxes to ensure optimal selection and preserve aromatics. After gentle pressing, fermentation typically takes place in small oak barrels, often with a portion of spontaneous (wild yeast) fermentation, followed by extended maturation on the fine lees. Regular bâtonnage (lees stirring) and the use of carefully chosen barriques help build texture and complexity while keeping the oak beautifully integrated rather than dominant.
Food & Serving
This structured, gastronomic Chardonnay is a natural partner for refined dishes: think roasted poultry with herb butter, veal in cream sauce, grilled monkfish or turbot, scallops, lobster and richer fish preparations. It also pairs wonderfully with truffled pasta, mushroom risotto and medium‑aged hard cheeses such as Comté or Gruyère. Serve at 10–12 °C to highlight its freshness and aromatic detail. Young bottles will benefit from 30–60 minutes in a carafe to open up the nose and soften the structure; older, cellared bottles can be poured directly with only a gentle splash‑decant if needed.
