Production
The grapes for this vinocentral UNIKAT come from old Weißburgunder vines rooted in the Eselspfad vineyard near Appenheim, a site marked by limestone-rich and loess soils that lend both minerality and finesse. The vines produce naturally low yields of healthy, concentrated fruit, which is hand-harvested at optimal ripeness to preserve purity and balance. In the cellar, Weingut Knewitz vinified the wine with great care, allowing a portion to mature in new barrique barrels while the rest aged in used wood and/or stainless steel to preserve freshness. A key hallmark of this cuvée is the extended lees aging of almost two years, with regular bâtonnage as needed, building depth, complexity, and the wine’s signature silky, yet powerful, texture.
