Silvaner is a true passion at Weingut Heiligenblut, and this Heimersheim Silvaner 2021 is their heartfelt homage to Rheinhessen’s classic grape. Sourced from limestone-rich vineyards in the hills of the “rheinhessische Schweiz,” it captures both the purity of the variety and the nuance of its terroir. Bottled unfiltered and without added sulphur, it offers a vivid, honest expression of Silvaner that feels both traditional and refreshingly contemporary.
Tasting Notes
In the glass, this Silvaner shows a glowing straw-yellow hue with a natural, slight haze – a hallmark of its unfiltered, low-intervention style. The first pour is marked by a distinct, savoury yeast note from the extended time on lees, which gradually gives way to a more intricate aromatic profile. With a bit of air, the nose unfolds layers of ripe orchard fruit (pear, yellow apple), lemon zest and subtle stone fruit, supported by hints of fresh herbs, hay, crushed chalk and a gentle nuttiness from its time in used barriques.
On the palate, the wine is precise yet textural, with a fine, understated creaminess wrapped around a stony, linear core. Juicy acidity keeps everything taut and refreshing, while flavours of pear, quince, citrus oil and a touch of white peach are interwoven with savoury, leesy complexity and a delicate saline note. The finish is long, bone-dry and mineral-driven, with a faint grip that speaks to the week-long maceration. Enjoyable now for its energy and texture, it has the structure and natural stability to evolve beautifully over the next 3–6 years, gaining more nutty, honeyed and herbal depth.
Production
The Silvaner Heimersheim 2021 is sourced from vineyards around Heimersheim, a village near Alzey in the hilly subregion often called the “rheinhessische Schweiz.” Here, the vines sink their roots into predominantly calcareous (limestone) soils, which lend the wine its tension, saltiness and chalky backbone. Grapes are hand-harvested to ensure optimal ripeness and meticulous selection in the vineyard. After picking, the crushed grapes undergo about one week of maceration on the skins, extracting gentle phenolics and aromatic complexity, before the must is pressed and transferred directly—without any fining—into used barriques. Fermentation takes place spontaneously with indigenous yeasts, and the wine remains for roughly 11 months in these seasoned barrels on its lees. It is then assembled as a cuvée from different barrels and bottled without filtration or added sulphur, in line with the estate’s low-intervention philosophy.
Food & Serving
This Silvaner’s combination of freshness, texture and savoury depth makes it a versatile partner at the table. It pairs beautifully with delicate yet flavourful dishes such as trout or zander with herb butter, steamed shellfish, lightly smoked fish, roast chicken with lemon and thyme, or veal schnitzel with potato salad. It also complements vegetarian fare: think asparagus with hollandaise, risotto with spring vegetables, roasted cauliflower, or soft-ripened cheeses and young goat’s cheese. Serve at 9–11°C to balance aromatics and structure; a brief decant of 20–30 minutes (or a good swirl in the glass) helps the initial hefe-driven notes to relax and allows the fruit and minerality to fully emerge.

Weingut Heiligenblut is a family-run estate in Rheinhessen, currently driven by brothers Christian and Martin Hannemann, who have made Silvaner a central focus of their work. The grape has deep roots in the region and at the estate, and the brothers’ mission is to restore it to the spotlight it once held in Rheinhessen. Working primarily with limestone-based sites around Alzey and Heimersheim, they favour a low-intervention approach: hand-harvesting, spontaneous fermentations, long lees ageing and minimal to no additions in the cellar. This philosophy has positioned Weingut Heiligenblut as one of the more exciting, artisanal voices in their corner of Rheinhessen, contributing to the broader renaissance of characterful, terroir-driven German whites.
