Weingut Hannes Sabathi’s 2019 Südsteiermark Alte Reben Sauvignon Blanc is a precise, terroir-driven expression from the steep, limestone-rich slopes of Gamlitz. Made from old vines and shaped by cool nights, high elevation and Austria’s distinctive Opok soils, it combines mineral tension, refined fruit and impressive length.

Tasting Notes
The wine is bright and pale in appearance. Its layered bouquet reveals gooseberry, ripe citrus and white peach, complemented by subtle spicy nuances. On the palate, it is taut and mineral, with ripe acidity, a finely textured mouthfeel and a long, precise finish. This is a structured Sauvignon Blanc with the balance and concentration to develop further in bottle. With careful cellaring, its fruit should integrate while its mineral and spicy dimensions become more pronounced over the coming years.

Production
The vineyards are located around Gamlitz in Südsteiermark, on steep slopes with poor, limestone-rich Opok soils. The combination of altitude, cool nights and low-nutrient ground encourages slow ripening and naturally concentrated, fresh fruit. Fermentation takes place spontaneously in large wooden casks and partly in stainless steel, followed by maturation on fine lees. This combination preserves freshness while adding texture and complexity without imposing a dominant oak character.

Food & Serving
Serve lightly chilled at around 10–12°C. Its mineral freshness and precise acidity make it an excellent match for shellfish and crustaceans, ceviche, grilled fish and refined vegetable dishes featuring fresh acidity or gently spicy accents. Decanting is not essential, but allowing the wine to breathe in a carafe for 20–30 minutes can reveal additional layers, especially when enjoyed young.
