The grapes are usually harvested by hand to ensure careful selection of healthy, ripe bunches, preserving the delicacy that Pinot Noir demands. In the cellar, the must is gently fermented at controlled temperatures to protect the varietal aromas, followed by maturation in a mix of stainless steel and/or traditional wooden vessels, allowing the wine to develop texture and complexity while maintaining its bright fruit profile and regional character.
