Production
The Silvaner Schalk 2022 comes from over 45-year-old, deep-rooted vines in the Schalk vineyard, part of the village of Rück, roughly halfway between Großwallstadt and Klingenberg in Franken. Here, the Silvaner grows on poor, weathered Buntsandstein (colored sandstone), a stony, low-nutrient soil that naturally limits yields and lends the wine its pronounced minerality and tension, even in warm and relatively dry years like 2022. To preserve freshness and balance in a variety that can easily become broad and alcoholic if picked too late, the grapes were harvested by hand with strict selection at optimal ripeness. After gentle pressing, fermentation and maturation took place in large, seasoned oak casks, allowing the wine to gain texture and complexity without overt oak flavors, keeping the focus firmly on terroir and the purity of the Silvaner fruit.

This Silvaner is a versatile food wine and a natural companion to classic Franconian and Central European dishes. It pairs beautifully with freshwater fish (such as trout or zander), asparagus in all variations, light poultry, veal schnitzel, and seasonal vegetable dishes featuring root vegetables, fennel or cabbage. Its herbal-mineral profile also works well with mild goat’s cheese, soft-rind cheeses and savory tarts or quiches. Serve well-chilled but not icy, ideally at 9–11°C (48–52°F), to let the aromatics fully unfold.
