Tasting Notes
In the glass, it shows a fine, elegant mousse and a restrained, polished profile. The nose is marked by yeast spice, brioche, and delicate vinous notes, while fruit remains deliberately subtle. On the palate, the wine is taut, focused, and energetic, with bright acidity, a firm structural backbone, and plenty of tension. The finish is long and precise, with its dry Extra Brut style suggesting excellent ageing potential for those who enjoy mature, complex sparkling wines.

Production
The base wine comes from the 2020 vintage and is composed of Chardonnay, Pinot Blanc, and Pinot Noir. After extended lees ageing for 41 months, the wine was disgorged without added dosage, resulting in a particularly dry, linear expression. This extended maturation on the yeast shapes the wine’s brioche character, texture, and depth while preserving its crisp, mineral-driven style.

Food & Serving
Best served well chilled at 6–8°C. Its dry, structured profile makes it an excellent match for oysters, sashimi, grilled fish, shellfish, light poultry dishes, or salty snacks such as aged hard cheese and cured meats. Decanting is not recommended; instead, open shortly before serving to preserve the wine’s finesse and sparkle.
