Food & Serving
Serve well chilled at approximately 9–11°C. Its lively acidity and mineral profile make it an excellent match for grilled or poached fish, shellfish, sushi, ceviche and poultry, while its concentration can also complement richer dishes such as veal or creamy vegetable preparations. Decanting is not essential when young, but a short decant of 20–30 minutes can help reveal greater aromatic depth; mature bottles are best opened and served carefully.
