Sourced from old vines and crafted with minimal intervention, this organic Sylvaner shows just how characterful and terroir-driven the variety can be. It captures the unadorned charm of southern Rheinhessen while offering the poise and depth that appeal to modern wine lovers.

Tasting Notes
In the glass, this Sylvaner shows a pale straw to light lemon hue with subtle green reflections, signaling freshness and vitality. The nose is delicate yet detailed, with fine blossom aromas, hints of woodruff and meadow herbs, and a gentle backdrop of yellow orchard fruit—think pear and mirabelle—woven with a light, earthy-mineral tone. On the palate, the wine is lean, dry and finely textured rather than opulent, with a cool, herbal-fruited profile. Juicy yet restrained yellow fruit is layered over a quietly persistent mineral backbone, supported by fresh acidity that keeps everything lifted and precise. There is a subtle creaminess from the long élevage, but no heaviness—just a focused, elegant flow through to a clean, savory finish. Enjoy it now for its tension and aromatics, or cellar it for 3–5 years to allow the herbal and mineral notes to gain even more complexity.

Production
The grapes for this Sylvaner come from almost 50-year-old vines rooted in the slightly heavier loess soils around Wintersheim in southern Rheinhessen, a terroir that naturally lends substance and gentle spice to the wines. The vineyard is farmed organically, with careful attention to soil health and biodiversity. Harvest is carried out by hand to ensure optimal selection of perfectly ripe, healthy bunches. After picking, the grapes are pressed directly and very gently over roughly twelve hours, extracting fine aromatics without harsh phenolics. The must then goes into used wooden barrels without sedimentation or prior clarification, where it matures slowly on its lees for an extended period, preserving texture and nuance. Only a minimal addition of sulfur is made shortly before bottling, allowing the wine to express its origin as transparently as possible.

Food & Serving
This Sylvaner is a natural match for delicate, produce-driven cuisine and subtly flavored dishes. It pairs beautifully with asparagus, artichokes, and seasonal vegetable plates, as well as freshwater fish, trout with herbs, lightly grilled white fish, or simple poultry dishes with lemon and fresh garden herbs. It’s also excellent with mild goat or cow’s milk cheeses and classic German dishes such as Zwiebelkuchen or Flammkuchen. Serve at 8–10°C to preserve its floral and herbal precision; a quick 15–20 minutes in a carafe can help the wine open up aromatically, especially in its youth.

Their wines are increasingly recognized among Germany’s insiders for their clarity, authenticity and impressive value in the context of premium, artisanal whites.
